Summer, we hope, means fewer responsibilities for those of us still in Berkeley and those of us who have ventured beyond our beloved Berkeley bubble. And with fewer responsibilities, we at the Clog are finding ourselves with more opportunities for indulgence. We can’t think of a better way to relax and indulge than with these easy to make and oh-so-summery cocktails.

Raspberry orange rum 

What you’ll need:

1 ounce Malibu Coconut Rum

1 ounce of your favorite gin, if you want a stronger cocktail

2 ounces blood orange sparkling soda

1 fresh orange

1 carton fresh raspberries

1 glass, we recommend a champagne flute

What you’ll do:

  1. Pour rum into glass.
  2. Pour blood orange soda into glass.
  3. Slice fresh orange and squeeze juice into glass.
  4. Take about two spoonfuls of raspberries to wash and dry.
  5. Muddle raspberries in separate bowl. (Pro tip: If you have a grapefruit spoon lying around, use this to muddle.)
  6. Add muddled raspberries to glass, stirring so they don’t all fall to the bottom.
  7. Top with sparkling water and your favorite gin, if you want a stronger drink.

Lemon grapefruit rum

What you’ll need:

1 ounce Malibu Coconut Rum

1 ounce of your favorite gin, if you want a stronger cocktail

2 ounces grapefruit sparkling soda

1 fresh lemon

1 vegetable peeler

1 glass, we recommend a champagne flute

What you’ll do:

  1. Pour rum into glass.
  2. Pour grapefruit soda into glass.
  3. Wash and slice fresh lemon.
  4. Squeeze lemon juice into glass.
  5. Using leftover lemon, take vegetable peeler to make about five strips of lemon zest.
  6. Add lemon zest to glass, saving one or two strips for garnish.
  7. Top with sparkling water and your favorite gin, if you want a stronger drink, and add remaining lemon zest to garnish.
