Delicious Oreo brownies for the soul

Full disclaimer: If you’re looking for a vegan, gluten-free, no-calorie, alternative-flour type of recipe, this isn’t the article for you. Oreo brownies aren’t for the dieter or the faint of heart. They’re for you to bring to a party and get the most compliments, or for you and your friends to do some late night, impulsive baking. These brownies are incredibly rich, give you a crazy sugar rush and require literally minimal effort. I’d love to give you a brownie recipe from scratch, but let’s be real: The magic of these brownies is that they’re so easy, yet so ridiculously tasty. You can doctor up the recipe however you’d like with different types of Oreos and toppings, so feel free to go beyond what I’ve suggested here.

Ingredients

  • 2 packages Ghirardelli Double Chocolate Brownie Mix (This one tastes the best, but any brownie mix will do!)
  • 2 eggs
  • ½ cup water
  • ⅔ cup olive oil
  • 1 package Double Stuf or Mint Oreos (or both!)
  • Nonstick cooking spray (suggested)
  • 13-by-9-inch baking pan (if using a 9-by-9-inch pan, split all the ingredients above in half)

Instructions

  • Preheat the oven to 350 degrees Fahrenheit, or 325 degrees Fahrenheit if you’re on convection bake.
  • Lightly grease or spray nonstick cooking spray on your baking pan.
  • Mix ¼ cup water, ⅓ cup olive oil and 1 egg.
  • Empty 1 package brownie mix in.
  • Stir with a spoon until it’s fully mixed.
  • Spread the mix into the pan — make sure it covers the entire thing.
  • Line up your Oreos onto the pan. It should be 4 Oreos by 7 Oreos. You should have 2 Oreos left in the package.

  • Mix the rest of your water, olive oil and egg together.
  • Empty the second brownie mix in.
  • Stir with a spoon until it’s fully mixed.
  • Pour this over your Oreos. Try to get the brownie to cover as much of the Oreos as possible, so use a spoon to pour and spread it on.
  • Crush up the remaining 2 Oreos (you can crush more if you have them), and sprinkle them on top of your creation.

  • Bake in the oven for 40-50 minutes, or until a toothpick comes out clean.  
  • Take out and let stand for at least 10 minutes. They’re pretty messy, so they’re cleaner to cut if you wait a little bit! But they do taste best hot, so it’s up to you.
