Now that we’re back on the college grind, we at the Clog have come to realize that baking is not going to be our biggest priority. As fun and exciting as elaborate recipes can be, they can also be expensive and time-consuming — neither of which sound too enticing to us. We provide you, therefore, with a delicious and simple compromise: the amazing and oh-so-underrated banana bread. Use it as a study snack throughout the day, have it with your morning coffee before class, or eat it when you get home from a night out this weekend. But above all, appreciate it, because if anything needs a little more recognition in the world of baking, it’s banana bread.
- 1/2 cup butter
- 1 cup sugar
- 2 eggs, beaten
- 4 bananas, finely crushed
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
Cream together butter and sugar.
Add eggs and crushed bananas.
Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
Pour into greased and floured loaf pan.
Bake at 350 degrees for 60 minutes.
Keeps well, if refrigerated.
