Tofu nuggets with creamy sriracha sauce

Happy Meatless Monday! Here’s a tofu nugget recipe that’ll have you craving more — you won’t even miss the chicken strips at Late Night. Whip up a batch of these golden, itty bitty cubes of goodness and show your friends that one day a week without meat isn’t so bad. The creamy sriracha gives these nuggets the kick of spice they need.

What you’ll need:

For tofu nuggets:

1 block firm tofu

Egg whites from 2 eggs

1/2 cup flour

1 tsp. garlic powder

1 tsp. dried parsley or cilantro

1/3 tsp. black pepper

3/4 cup breadcrumbs

Enough oil to fit tofu in pan and fry

For creamy sriracha mayo:

1 cup plain Greek yogurt

2 tbsp. sriracha sauce (or more if you can handle the heat)

1 tsp. lime juice

What you’ll do:

For tofu nuggets:

1. Slice tofu into small cubes (about 1 inch).

2. Mix flour, breadcrumbs, garlic powder, dried herbs and black pepper in a separate bowl.

3. Dip sliced tofu cubes into egg white mixture.

4. Dip egg white-covered tofu cubes into the mixture created in Step 2.

5. Pour about 1/3 inch of oil into the pan and heat on medium heat.

6. Fry tofu nuggets in oil until they turn a golden brown color.

7. When taking nuggets out of oil, put them on a napkin-covered plate.

8. Allow nuggets to cool.

For creamy sriracha mayo:

1. Stir Greek yogurt, sriracha sauce and lime juice together.
