Scrambled egg whites and pan-seared shrimp

Breakfast is a commonly skipped meal among college students. But have no fear, Eating Berkeley is here. We’re here to help you get in the nutritious, well-balanced meal you need every morning. The best part? It requires minimal effort on your part.

What you’ll need:

Jumbo shrimp

3 egg whites

1/4 cup mushrooms

1/4 cup grape tomatoes

1/4 cup spinach

2 tablespoons chopped onion

Dash of garlic powder, black pepper, crushed chili, paprika, dried herbs or any other seasonings you like

1 avocado

What you’ll do:

1. Clean shrimp.

2. Spray pan with cooking spray. Cook shrimp for 3 to 4 minutes, stirring frequently. While cooking, add seasonings.

3. Spray another pan with cooking spray. Add egg whites, vegetables and seasonings. Cook on medium heat. As eggs begin to set, start scrambling.

4. Slice avocado. (Unlike pictured above, make sure the ripeness is just right. Pull the stem. If it’s green underneath, it’s good to eat. If it’s brown, it’s too ripe.)
