Grilled cheese is a classic staple of American childhoods. It has every key ingredient a good dish should have: a crunchy bite, satisfying melted cheese oozing down the sides and the perfect amount of salt. As far as we know, a grilled cheese can do no wrong. But there are ways to make it even better. This “advanced” grilled cheese recipe will add a whole new layer of flavor to your sandwich-eating experience. You can NEVER go wrong with bacon or guacamole. So why not put them together?

Ingredients
2 slices Kraft American Cheese
1½ tablespoon melted butter
2 slices sourdough bread
2 pieces bacon
2 spoonfuls of mild guacamole

First melt your butter in the microwave for 10 seconds. Spread the butter evenly on each side of your sourdough bread. Start to grill your bread, butter side down, on a medium-sized pan on low heat. Take your two slices of Kraft American cheese and lay them side-by-side on one slice of sourdough bread. Leave the bread and cheese in the pan on low heat while you grill the bacon. Check every minute or so to make sure the bread is not burnt on the butter side.
To grill the bacon, use a different pan so your cheese and bread finish cooking by the time you finish your bacon. This will help you keep your cheese hot and melted, instead of it getting cold while you prep the other ingredients. Cook the bacon in the pan on high heat for 2-3 minutes on each side, depending on how crispy you like it.

When I made this myself, I made the mistake of putting the second slice of bread on top of the melted cheese. Instead of doing this, you will want to keep the slices of bread separate, until you assemble all parts of your grilled cheese.

You’ll want to do this next step quickly, so that your cheese stays warm! By the time your bacon is done, the cheese should be melted on your second slice of sourdough. Take the slices of sourdough off the pan and set on a clean plate. Spread two spoonfuls of your mild guacamole on the slice of sourdough that doesn’t have cheese on it. Lay your bacon on top of your guacamole and slap the two slices of sourdough together.
