If you couldn’t tell by the various banana bread recipes I’ve already written, I absolutely love banana bread. It has to be one of my favorite snacks of all time. When I saw someone selling matcha banana bread on Facebook’s Free & For Sale page for UC Berkeley students, my heart stopped. Matcha banana bread is a thing? It’s indeed a match made in heaven, and I am extremely disappointed that I didn’t discover it sooner! The matcha isn’t overpowering, and it adds a nice touch to the already delicious banana bread. It’s a dream that you didn’t know you wanted until you take your first bite into the fluffy and delightful matcha banana bread — your eyes widen and your mouth begins to water. Try it out! You won’t regret it!
Ingredients
½ cup sugar
2 large eggs
½ cup coconut oil
3 ripe bananas (Optional: 1 additional banana for decor!)
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 ½ tablespoons matcha powder
Instructions
Preheat the oven to 350 degrees Fahrenheit and butter the loaf pan with coconut oil. Combine the sugar and coconut oil in a large bowl. Beat in the eggs to the mixture and mix until it’s well-combined. In a separate bowl, mash the three ripe bananas with a fork. Stir in the milk and ground cinnamon. Add the flour, baking powder, baking soda, salt, matcha powder and banana mixture to the large bowl with the coconut oil.
Evenly pour the batter into the loaf pan. If you would like, you can slice a banana in half and place it on top of the batter. This adds a little more texture to your bread at the end. I highly recommend you to try it out! Place the pan in the oven for about 50-60 minutes or until the toothpick comes out clean when you insert it into the loaf.
