Squash this recipe for National Zucchini Bread Day

Happy National Zucchini Bread Day! Yes, it’s a national holiday and we’re here to help you celebrate it. Zucchinis are very universal and can be used to make a variety of different dishes, from a simple roasted zucchini dish to zucchini noodles, zucchinis have to be one of the best squashes. Even in bread they’re still extraordinarily delicious! Try out this easy and appetizing zucchini bread recipe to celebrate National Zucchini Bread Day this year.  

Ingredients:

3 cups all-purpose flour (I used whole wheat!)

1 teaspoon salt

1 teaspoon baking powder 

1 teaspoon baking soda

½ cup sugar

1 tablespoon ground cinnamon 

3 eggs  

½ cup coconut oil  

1 teaspoon vanilla extract  

4 cups grated zucchini  

Directions:

Grease and flour a loaf pan and heat the oven to 325 F.

In a large bowl, combine the flour, salt, baking powder and soda, sugar and cinnamon. Mix in the eggs, coconut oil and vanilla extract. After everything is well combined, add in the grated zucchini.  

Pour the batter into the pan and bake for about 50-60 minutes, or until an inserted toothpick comes out clean.

Let is cool for about 15 minutes before consuming.
