With the autumn season approaching, it seems that the world is inundated with pumpkin spice this and caramel apple that. Those of us with pickier (and perhaps more sophisticated) palates might prefer a more traditional take on the current fall offerings. For those who are seeking a simple recipe that will still bring home the flavors of fall, here is the ultimate fall-inspired granola recipe.

What you’ll need:

  • 2 cups rolled oats
  • 3 heaping tablespoons ghee (or butter)
  • 3 heaping tablespoons coconut oil
  • ¼ cup maple syrup
  • 2 teaspoons cinnamon
  • 1 teaspoon cardamom
  • ½ cup coconut
  • ¼ cup pecans
  • ¼ cup slivered almonds
  • ¼ cup walnuts
  • ¼ cup hazelnuts
  • A sprinkle of sea salt

Instructions:

Preheat your oven to 325 degrees Fahrenheit. Chop up your nuts, pour all other ingredients into a large mixing bowl and mix well. Pour onto a large pan lined with parchment paper and bake for 10 minutes. Take out the granola, and mix it a bit with a spatula to ensure everything has cooked through (be sure not to over-mix, as you don’t want to break up the clusters).

Then, place the granola mix back in the oven for an additional eight minutes until it’s golden brown and your house smells like autumn. Wait a few minutes until it has cooled slightly and serve! It will stay delicious even if it’s left out to sit at room temperature for a few weeks.

This granola can be used in endless ways: as a topping for an apple crumble, on top of yogurt, mixed into oatmeal or even as a post-workout snack. It’s the easiest way to incorporate the fall season into your daily meals!
