Score big with this empanada recipe for Big Game

The biggest game of the season means lots of viewing parties and therefore lots of good food! This fun play on an empanada is completely customizable, as you can add pretty much whatever combination of ingredients you want. These football empanadas will for sure score as the perfect snack for the Big Game!

Ingredients:

  • 2 cups of your filling (whatever meat or veggie mixture you choose, we chose chicken breast)
  • 1 cup of your cheese of choice (we chose mozzarella)
  • ½ cup of your sauce of choice (we chose pesto)  
  • 2 cans of refrigerated biscuit dough
  • 1 cup of flour 

Instructions: 

Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. In a large bowl, mix your filling, cheese and sauce together until it’s combined well.

Prepare your working surface by generously sprinkling flour on it to ensure the biscuit dough won’t stick. Take one biscuit, and cut it in half. Roll out both halves of dough by either spreading them out with your fingers or using a rolling pin. Using a knife, cut both circles of dough into the shape of a football. Scoop up a small spoonful of your filling mixture, and place it at the center of one side of the biscuit dough.

Cover this with the other half of your biscuit dough, and press the edges down with a fork. Take a sharp knife, and cut a line lengthwise across the middle of the football. Then, make small cuts perpendicular to the middle long line that you just made to create the “laces” of the football.

Repeat until you finish all of your dough and filling. Place completed empanadas onto your prepared baking sheet and bake for 8-10 minutes. After they are golden brown, serve with extra sauce and enjoy the game!

With these simple, delicious and totally customizable empanadas, surely everyone at your Big Game viewing party will be satisfied!
