I know, I know. It’s barely midwinter and the temperatures have been absolutely freezing! Not to mention the windy and foggy air this time of year. To get you all in the mood for springtime, sunshine and rainbows, here is a healthy spring-inspired nourish bowl recipe that’s sure to brighten your day!
1 baked sweet potato
2 cups raw spinach
Baked chicken breast (1 serving is about the size of the palm of your hand, but feel free to double it for extra protein!)
½ cup sunflower sprouts
Vegan protein option: ½ block baked tofu
Tahini dressing ingredients
1 tbsp tahini
1 tbsp lemon juice
½ tbsp apple cider vinegar
1 tsp maple syrup
1 tsp garlic powder
Salt and pepper to taste
Mix all the ingredients for your tahini dressing in a small cup and set aside. Then, start assembling your nourish bowl by placing the spinach on the bottom. Next, add the sprouts, baked sweet potato, avocado and chicken or tofu. Drizzle the dressing on top and you’ve got an absolutely magical bowl on your hands!
