This recipe encompasses all that a homemade soup should be: warm, healthy and easy! This vegetable soup is a great way to add more nutrient-dense vegetables to your diet without sacrificing any flavor. The best part is you can add any vegetables you want! This recipe is also great to make in bulk and freeze, so you’ll always have a healthy and comforting option around that takes no time at all to enjoy. In honor of National Homemade Soup Day, here’s how to make a super simple and delicious soup!
2 tbsp chopped garlic
Vegetables of your choice (We chose broccoli, cabbage, zucchini and spinach)
24 ounces tomato sauce (We recommend Rao’s Homemade Tomato Basil)
8 ounces chicken broth (Water can be used as a replacement)
Cheese to melt on top (optional)
Start by heating a pot on the stove. Next, sauté the chopped garlic in your cooking oil of preference. After a few minutes, add your hardier vegetables to the pot, as they will need more time to cook (for us, the broccoli and zucchini). Once these vegetables are soft, add the other vegetables and sauté until those have softened as well. Add the tomato sauce and chicken broth and bring it all to a boil. Once the soup begins to boil, reduce the heat to your stove’s low setting and let the soup simmer for 30 minutes. Top with cheese and enjoy!
