With so much going on right now, it’s normal to feel defeated and down. But when life gives you lemons, you can either let them rot or make something that will bring you joy! This delicious lemon chicken and pasta recipe is sure to lift your spirits. Here’s how to put it all together.
Ingredients
- 2 tablespoons olive oil
- ¼ cup fresh squeezed lemon juice
- ¾ cup chicken broth
- ½ cup pecorino Romano cheese
- ½ cup drained capers
- 4 boneless, skinless chicken breast
- 1 pound pasta of your choice
- 1 clove minced garlic
- Salt
- Pepper
Instructions
Start by adding 2 tablespoons of olive oil to your pan on medium heat. Season your chicken on one side with salt and pepper. Then add the chicken, season side down, to your pan. Add salt and pepper to the other side of the chicken and cook for four minutes. Flip your chicken and cook for another four minutes. Once your chicken is browned on both sides, remove your chicken from the pan. Add one clove of minced garlic to your pan and frequently stir for one minute. Next, add in your lemon juice, chicken broth and capers. Lower the heat to low and cover. Let cook for 10 minutes.
Meanwhile, bring water to a boil in another pot. Once boiling, add a generous amount of salt and add your pasta. Follow the cooking directions on your pasta box for the best results. Once your pasta is cooked to al dente, take one cup of the starchy pasta water and add it to the pan with the chicken. Next, add your drained your pasta to the pan. Add the pecorino Romano and mix it all together. Serve and devour!
