Ringing in a new semester: End-of-summer mocktails to beat the heat

With summer coming to an end, there’s no better way to ring in the new school year than with some vibrant mocktails. While this summer may not have been what we were expecting, we have tried to make the best of our time in the midst of a pandemic. Celebrate the end of summer with these simple and delicious recipes. 

Peach spritz 


  • 1 cup peach juice 
  • ½ cup sparkling water 
  • 1 tablespoon lime juice
  • 1 tablespoon honey or agave 
  • Peach slice (for garnish)


  1. Mix the peach juice, sparkling water, lime juice and honey or agave together.
  2. Pour into desired glass.
  3. Garnish with the peach slice and enjoy!

Virgin raspberry lemon mojito 


  • 1 cup raspberries 
  • 1 cup lemonade 
  • ½ cup sparkling water 
  • 1 tablespoon honey or agave
  • 10 mint leaves 
  • Lemon slices, mint leaves or raspberries (for garnish)


  1. Smash the raspberries with a fork until they are a smooth, pureed consistency.
  2. Mix the lemonade, sparkling water and honey or agave until thoroughly combined.
  3. Add the muddled raspberries to the mixture.
  4. Chop or crush the mint leaves and mix in.
  5. Garnish with lemon slices, more fresh mint or whole raspberries!

With these easy mocktails, you can raise your glass and toast to this past summer as you cool down from the scorching heat. Have a great school year, Golden Bears!
