Eating only green foods for 1 day in celebration of St. Patrick’s Day

St. Patrick’s Day, or the Feast of St. Patrick, commemorates the arrival of Christianity into Ireland and is celebrated heavily by those living there but also by those in the United States. Associated with green decor and lucky leprechauns, preparing green foods to match the theme can be part of your celebration and give rise to trying some new meals and snacks. Here is a full day of eating only green foods in celebration of St. Patrick’s Day. 

Green spirulina pancakes 

Starting your day off with a nutrient-dense breakfast is always a win for your mind and body, but making it fully green is sure to bring you luck to St. Patrick’s Day! These homemade spirulina pancakes have minimal ingredients such as oat flour and almond milk and only take 10 minutes to prepare. Rather than adding in green food coloring, this stack turns vibrantly green on its own. These pancakes not only give you a boost of energy but are also loaded with health benefits, ranging from antioxidants to anti-inflammatory properties. For the ultimate breakfast combo, pair these pancakes with a green smoothie made with spinach, mango and banana.

Avocado toast 

A spin on the classic avocado toast, you can add toppings of crisp arugula to incorporate an extra cruciferous vegetable to your day. Toast your favorite bread, and smear on fresh avocado — along with a sprinkle of salt and pepper — to make a magically delicious lunch. Endless possibilities of toppings ranging from cilantro, cucumber or even a layer of pesto can bring your avocado toast game to the next level.

Matcha latte 

Mache lattes with almond milk and honey are my usual go-to pick me up when I’m feeling that afternoon slump. This refreshing green drink is aesthetically pleasing and gives you just the right amount of caffeine to power through the day. I don’t prefer mine to be on the sweet side, so just a drizzle of honey will do the trick for me, but matcha also goes well with vanilla or simple syrup — all delicious options to put you in a lucky mood. 

Kale gnocchi with pesto 

Salads are a great option to get your nutrients in, but changing your dinner to something different while still reaping the benefits of greens can up your health game — and what better way to start this change than during St. Patrick’s Day? Lately, I’ve been loving kale gnocchi topped with a vegan kale and cashew pesto, but this dish can easily be substituted with green edamame pasta or zucchini noodles. Ending your day with a healthy and balanced dinner will leave you with luck even past St. Patrick’s Day. 

Celebrating the luckiest day of the year by eating spirulina pancakes and sipping on an ice-cold matcha latte put me in the St. Patrick’s Day spirit. Hopefully, these green foods will also leave you radiating with green and glowing luck.
